Paixar “Viña de Vaca” is the result of precision and passionate viticulture. It comes from a small and exclusive plot located in the area of Dragonte (Corullón), where the centenary vines struggle against the extreme conditions of altitude and impossible slopes. It is a wine that stands out for its aristocratic elegance and a minerality that only pure slate over bedrock can provide. A red wine designed for the most discerning collectors.
Unique Terroir: Located at an altitude that challenges the limits of viticulture, this vineyard benefits from slow ripening and extreme thermal contrast, resulting in unparalleled aromatic complexity.
Noble Aging: It patiently rests in selected French oak barrels, achieving a perfect integration where the wood enhances the fruit and the mountain landscape.
Mencía from a Specific Site: Being a selection from a single plot, the wine captures the specific essence of that soil and microclimate, distinguished by its finesse and length.
Visual Phase: Deep cherry red colour, high layer, with violet glints that promise longevity.
Olfactory Phase: A complex and deep nose. It highlights a volcanic minerality (smoke, graphite) intertwined with ripe black forest fruits, notes of violets and a background of aromatic herbs and fine spices.
Gustatory Phase: On the palate it is superb. It has an imposing structure but with a silky texture. It is balanced, fresh and deep, with silky tannins and a noble acidity that underpins the whole.
Finish: Almost infinite persistence, leaving a mineral and fruity memory that evolves in the glass minute by minute.
