Tasting Notes

  • Appearance:Dark garnet red, almost black in the centre, bright and dense
  • Nose:Complex and deep: candied black fruit, balsamic notes, exotic spices, liquorice, and a marked mineral slate background
  • Palate:Voluminous entry, round and silky tannins, lively acidity that brings freshness, very long and spicy finish with a mineral aftertaste

Pairing and Service

Aged red meats, game (wild boar, venison), traditional stews from the area, and intense blue cheeses. Serving temperature: 16-18°C. Decant 30-40 minutes before serving. Ageing potential: 5-8 years.
