Jonás is a limited edition that revives the ancient Bierzo tradition of co-fermenting red and white varieties. A captivating and easy-drinking wine that will surprise you with its lightness and delicious fruity intensity.
Made under a concept of"return to the origins", Jonás is born from the co-planting and co-harvesting of grapes from different plots:
Mixed Harvest:The Mencía grapes are harvested alongside the local white varieties (Palomino and Valenciana) in a single day.
Peculiar Colouration (The Clarete):After pressing and obtaining the must, a10% of skins(grape skins) is added to extend fermentation. This brief contact with the red skins gives it its characteristic and attractive colour.
Gentle Clarification:Subsequently, the racking and a light filtration are carried out to remove the skins, followed by the final clarification, resulting in a clean and bright wine.
This clarete is distinguished by its friendliness, freshness, and unique aromatic profile:
Visual Phase:Attractiveruby red, with a medium-low layer, completely clear.
Olfactory Phase (Nose):Medium intensity but very pleasant. The delicatefloral aromasstand out, reminiscent of garden roses. In terms of fruit, notes ofapple(Fuji or Gala type) are perceived, a very characteristic touch of white varieties.
Gustatory Phase (Mouth):
Smooth and light entry:It is a wine foreasy and quick drinking, which gives it its famous "danger point".
Balance:It shows amedium acidityand very subtle tannins, making it extremelyfriendly..
Persistent Finish:It is very fresh and intense on the retronasal, with a surprising appearance offruit in the form of a lollipop, evoking nostalgic childhood memories.
