Aging on Lees: The wine rests for more than 12 months in selected barrels, working on its own lees to gain creaminess, volume, and elegant toasted notes without losing fruity freshness.
Cold Maceration: A precision technique (4ºC for 4 days) that allows for the maximum extraction of colour and noble aromas from the skin of the Sousón grape.
