The Essence of the Production

The magic of BABÚ lies in the origin of its grapes and in a minimally interventionist winemaking process:

• Unique Varieties:It is made with a blend of indigenous varieties:Godello, Doña BlancaandJerez(Note: according to other sources, this variety could be Palomino).

• Century-Old Vineyards:The grapes come from vineyards that range between80 and 100 years, which provides exceptional concentration and richness to the must.

• Natural Fermentation:After destemming and a gentle pressing, the must ferments slowly in small stainless steel tanks for about20 days. For this, indigenous yeasts are used(from the grapes themselves), without adding industrial yeasts. (procedentes de la propia uva), sin añadir levaduras industriales.

• Unfiltered for Greater Character:The clarification process is carried out naturally through decantation and periodic racking,without using any type of filter. This artisanal technique maximises the complexity of the wine.
