The vinification of MINGUS aims to enhance the fresh and fruity qualities of the old vine Mencía, prioritising minimal intervention:
Exceptional Raw Material:100% Mencía grapes from vineyards over 80 years old, ensuring maximum concentration.
Short and Natural Fermentation:After destemming the grapes, the must ferments in small tanks for about9 days. Onlynative yeasts(indigenous) from the grape are used, respecting its character.
Artisanal Clarification:Once fermentation is complete, the wine is racked and gently pressed. It is clarified by natural decantation and periodic racking,without the use of any type of filter., which preserves all its strength and natural expression.

Visual Phase:Attractivecherry red, bright, with flashes that denote its acidity and liveliness. In the glass, it exhibits aintense tearthat confirms its structure.
Olfactory Phase (Nose):Intense and very frank. It dominates the explosion ofwild fruit aromas(blackberry, raspberry) and that characteristic touch of Mencía that recallsfloralsand underbrush.
