Vintage: 2023 |D.O. Bierzo | Location: "A Serra" (Dragonte) |Aging:18 months
Paixar is not just a wine, it is a masterpiece of heroic viticulture. Born in the location “A Serra”, in the remote village of Dragonte (Corullón), this 100% Mencía comes from vineyards located on extreme slopes at altitudes between 700 and 1,000 metres. Its pure decomposed slate soil over bedrock and its south-facing orientation provide a unique character that merges the rusticity of the wildest terroir with the supreme elegance of Mencía.
High-End Aging: 18 months of resting in French oak barrels and bottled unfiltered to preserve its soul and monumental structure.
Atlantic Vintage 2023: A year characterised by an excellent thermal contrast between day and night, resulting in a Paixar that is particularly complete, balanced, and deep.
Dragonte Terroir: The traditional planting density and mountain climate give this wine an unreachable mineral personality for valley vineyards.
Visual Phase: Very intense cherry colour, deep, with high density and thick legs.
Olfactory Phase: An astonishing complexity where extreme minerality (slate), balsamic notes, noble spices, and vivid memories of scrubland predominate.
Gustatory Phase: On the palate, it is bold and complete. It is a wine where the rusticity of the Dragonte terrain embraces a silky elegance.
Finish: Infinite persistence, with an aftertaste marked by Atlantic freshness and the spicy character of its long aging.
Paixar consolidates itself in this vintage as one of the highest-rated wines in the history of Bierzo:
98 Points– Tim Atkin.
96+ Points– Robert Parker (The Wine Advocate).
A wine of this magnitude requires dishes to match:
Game: Venison, wild boar with reductions of red fruits or red partridge.
Long-Aged Red Meats: Grilled beef rib.
Traditional Gastronomy: High-quality Bierzo botillo or Castilian roasts.
Cheeses: Pairs masterfully with the Vallelongo Black Cow Cheese, where the minerality of the slate and the strength of the cheese create a perfect harmony.
