Production: The Character of the Mountain
The altitude of the vineyards is key to obtaining the raw material for this Crianza:
High Altitude Vineyards: We use the highest and sunniest vines of the winery, at altitudes ranging between 700 and 800 metres. This extreme location ensures a slow maturation and exceptional quality Mencía grape.
Pure Fermentation: The 100% Mencía grape is destemmed and fermented with natural yeasts (specific to the grape).
Resting and Clarification: The wine is naturally decanted and clarified for one year in stainless steel tanks before moving to wood.
Aging in Barrel: Once clean, the wine is aged for 12 months in French oak barrels, where it acquires the complexity and tertiary nuances that define it as Crianza.
Tasting ALTO DE LA JUDIEGA: The Unexpected Smoothness
A powerful red in structure, but surprising in delicacy:
Visual Phase: It shows a muted cherry red colour, with hints that evidence its time in barrel. In the glass, it displays a very powerful and dense tear, a reflection of its high alcohol content.
Olfactory Phase (Nose): It offers a myriad of aromas that are complex. The ripe fruit (red and black fruits) intertwines harmoniously with the elegant aromas of the wood (sweet spices, vanilla, and toasted notes).
Gustatory Phase (Mouth):
Smoothness and Delicacy: Despite its 15 degrees of alcohol, on the palate it is incredibly smooth and delicate., without noticing the alcoholic intensity.
Structure and Finish: It has a great body and polished tannins from the barrel, offering a long, persistent, and very pleasant finish.

This Crianza wine is the ideal companion for full-bodied dishes. It pairs perfectly with roast red meats, game birds, traditional stews and mature cheeses intense.
