Sensory Description
This cheese is distinguished by its white, soft, and grainy texture. When tasting it, you are transported to its origin: it has a fresh taste and aroma that directly recalls pure cow's milk, with a slightly acidic note that makes it balanced and elegant on the palate.
Origin and Production
It is made exclusively from whole, pasteurised milk from cows of the breeds Rubia Gallega, Pardo Alpina, and Holstein. The manual process ensures that each piece retains the organoleptic properties that have granted it the seal of Protected Designation of Origin.
