Wild Calluna Honey Organic 800g

Calluna vulgaris accompanied by heathers and Sedum sp. 

SENSORY CHARACTERISTICS TASTE: Sweet, with clear bitter notes in the retronasal. Very complex honey full of nuances. 

AROMA: Very intense with a clear animal component that lingers for a long time. COLOUR: From amber to dark amber. 

CRYSTALLISATION: Gel-like texture and late crystallisation in the form of gel. 

PACKAGING: 800g. 

Additional information: honey with organic certification collected in completely uninhabited areas, meadows and alpine heaths at 1800m altitude, in the Bierzo region (León, Castilla y León). This honey contains a protein (present in the nectar of Calluna vulgaris) that gives it a physical property called thixotropy. As a result, it behaves like a gel (semi-solid) at rest, regaining fluidity for a short period of time after being stirred or shaken. Very limited production.
