Vintage: 2021 |100% Organic Mencía | Aging:12 months |Ultra-Limited Edition
The Gancedo Ucedo is the "age-worthy wine" par excellence of the winery. It comes exclusively from the vineyard Los Almendros, where centenary vines grow, which offer a minimal yield (3,500 kg/Ha), but with an unparalleled concentration. Under strict organic cultivation, this wine is a tribute to patience and the slate terroir: a dense, powerful, and deeply mineral red that reflects the most indomitable soul of Bierzo.
First-Class Aging: After open fermentation, it undergoes malolactic fermentation and ages for 12 months in first-use French oak barrels, which gives it exceptional structure and aging potential.
Slate and Limestone Terroir: The combination of loamy soil and slate pebbles gives the wine a mineral identity and a complexity that only the oldest vines can convey.
Total Exclusivity: With a production of only 3,000 bottles, Ucedo is a collector's item for those seeking wines with body, soul, and a rich history.
Visual Phase: Very intense, deep, and bright cherry colour.
Olfactory Phase: Powerful and complex. It features an overwhelming minerality (slate) accompanied by wild black fruit, liquorice, and spicy notes from the noble wood.
Gustatory Phase: On the palate, it is an experience of pure concentration. It is a wine dense and meaty, with very present tannins but with exquisite sweetness.
Finish: Notes of black fruit jam (ripe cherries) appear in a long, warm, and highly persistent finish.
High Gastronomy Pairing:
Given its power and density, Ucedo requires dishes with character:
Aged Red Meats: Rib of beef, grilled meats or oxtail.
Game: Venison, wild boar or stewed partridge.
Structured Dishes: Traditional Bierzo Botillo or hearty legumes.
Cheeses: ideal pairing is the Vallelongo Black Cow Cheese, where the power of the wine's sweet tannins balances the intensity and maturity of the cheese.
